Tonight for dinner I made BBQ Meatloaf with Sweet Potato Home Fries. Another hit! I find that as I travel down the Weight Watcher road I am reminded of the great foods that you create when you are doing WW. There is no greater feeling then creating a wonderful meal for your family and when your husband walks through the door the first thing out of his mouth is "something smells great in here". Not to mention watching your 6 year old get excited about eating mandarins and asking for another one.
I enjoy making my meatloaf in a muffin tin. It makes portions a perfect size, not to mention consistent.
BBQ Meatloaf
6 servings
1 lb. ground turkey
1/2 c. bbq sauce, divided
1/4 c. chopped onion
1/4 c. bread crumbs
2 egg whites
salt & pepper
Preheat oven to 375. Combine meat, 1/4 c. bbq sauce, onion, bread crumbs, egg whites, salt & pepper; stir well. Spray muffin tin with cooking spray and divide meat mixture into the cups. After evenly dividing the mixture spread remaining bbq sauce on the top of each individual meatloaf "muffin". Bake at 375 for 25 minutes.
