Breakfast: Eggs Florentine

I have seen Eggs Florentine advertised many times, but I have never tried it, until this morning.  I bought a huge container of fresh spinach from Costco so now you know I am searching for recipes to make so that this container doesn't go bad.  So I was daring today and I made myself some Eggs Florentine.  And let me tell you it was YUMMY!  If you have not tried it, you need to!

Eggs Florentine
1 serving

2 egg whites
1/2 c. spinach
1/4 c. chopped bell pepper (this wasn't in the original recipe, I added it)
1 Tbsp. sliced green onion (this wasn't in the original recipe either, but I added it too)
1 tsp. sliced cheddar
1/2 whole wheat english muffin

Spray pan with cooking spray add spinach, cook for a few minutes when it starts to wilt add the other vegetables. While that is cooking add some salt and pepper to egg whites.  Once the spinach is completely wilted add egg whites and cook thoroughly, sprinkle with cheese and melt.  Place on top of english muffin and enjoy!
