This morning I decided to put together my work out schedule, up until now I've just been going by how I feel in the morning, and soon that's going to bite me in the bootie! So looking at my schedule its a little zealous, but I am determined to do it! Yesterday I started the "Couch to 5k". I have never thought of myself as a runner in any way....well only if I were being chased by an axe murderer, then I might just run. But, I must say that after doing Day 1, I am excited! I can't wait to finish this and be at a point where I will be able to run a 5K and not feel like I am going to keel over. I am excited for this new journey in my life. I am also going to start looking around to see when there are races in Anchorage that I can participate in. Then I will have a goal (other than weight loss and getting healthy) to work towards. Who would have thought?!
The other night I made some throw it together enchiladas for dinner.... And sometimes those are just the best meals! They weren't too spicy for little man (you can add jalapeƱos to spice it up if you choose). I just used the ingredients I had on hand
Throw it Together Chicken Enchiladas
Serves 10
2 chicken breast, cooked and chopped finely or shredded
2 oz fat free cream cheese
1 can reduced fat cream of mushroom soup
1 can (10 oz I believe) geen enchilada sauce
1 small can green chiles
4 green onions
4 oz reduced fat shredded Mexican cheese
10 flour tortillas, taco size
Heat oven to 350. Mix together chicken, cream cheese, soup, 1/4 c. Enchilada sauce, green chiles and green onions. Put about 2-3 tbsp of mixture in middle of tortilla and roll up. Place in 8x11 baking dish, that has been sprayed with cooking spray. Continue this process until they are all filled and in pan. Cover with shredded cheese and top with remaining enchilada sauce.
(Yes my pan only has 8 in it, but I had more in different pan, it will make 10.)
Tomorrow is the start of the
Iditarod here in Alaska. Since this is little mans first winter here I think we are going to head downtown and watch the beginning. It is going to be a blast! For the 20+ years that I lived here before, I have never watched the start of the race, so this will be exciting for all of us. And with all that walking downtown, I'm guaranteed to earn some extra points!
